Lasagna in a crock pot? Did I read that right? Oh yes you did! It’s one of my favorite crock pot meals. And so simple too.
- 1 pound cooked and drained ground round
- Cottage cheese
- Medium cheddar cheese
- Jar of spaghetti sauce (we like the kind with vegetables in it)
- Part of a package of lasagna noodles
Ready for the cool part? You don’t have to cook the pasta first in this recipe–oh yes–things just got that much simpler 🙂 .
Start your first layer. Carefully break the pasta to fit in a layer in the bottom of your crock pot. This takes a bit of practice. If it breaks all apart it’s okay. Just put it in broken. I promise it won’t make any difference. Next, layer in half your cooked meat. Layer in half your sauce. Put a nice layer of cottage cheese on (I usually use 1.5 of the smaller containers of cottage cheese for this recipe or a little over half of the Costco size container). Give it a good layer of grated cheese. Your first layer is done. Now repeat that. Layer on pasta, then the rest of your meat, then the rest of your sauce, a layer of cottage cheese, and then a layer of cheese.
At this point, you can refrigerate overnight if you want. I often do. If you are ready to cook however, I suggest cooking on low for 6 hours.
I use this recipe in a medium or larger crock pot depending on how big I want it. If using a larger crock pot, I may increase the amount of meat, but will definitely increase the amount of cottage cheese and medium cheese. At our house, everyone has at least two servings, and there is some left over for lunch later in the week.
